Bagels

“Blueberry Muffin Bagels

Ingredients:

2 cups bread flour

1 cup Greek yogurt

1/4-1/2 cup buttermilk (or can do 1 more cup Greek yogurt)

1 tsp baking powder

1/4 tsp salt

1 cup blueberries

Instructions:

 1. Kneed together all ingredients (start with ¼ cup buttermilk and add more as needed); incorporate more flour as needed if dough becomes sticky. Stir in blueberries.

2. Add dough to a floured surface and divide into 4-6 bagels. If dough becomes too sticky, add more flour. Can roll into rods and then shape the bagel. Brush with egg wash.

3. Bake at 350F for 20-25 minutes, then broil for 2-3 minutes.”

Calories are based off of 2% Lactaid milk used and non-fat Greek yogurt (Great Value) 


Additional Notes:

When I made this recipe I used 1/4 cup of 2% Lactaid milk and 1 1/2 cup of plain non-fat Greek yogurt and found that it worked just as well! I used frozen blueberries, which I found to be messy and squishy when trying to roll out and shape into bagel form. They still turned out delicious though. Instead of adding the blueberries you can always not include them and have a plain bagel or substitute with a different food such as raisins, chocolate chips, nuts, seeds etc…

Overall, I think this is a great base recipe for a bagel and healthier compared to most options you will find in a store or a bakery. As someone who is admittedly not good at baking, even I could manage to make them. Get to baking and enjoy!
